- 1/4 cup honey or maple syrup (optional)
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the rolled oats, applesauce, mashed banana, cinnamon, and baking powder.
- In another bowl, whisk together the milk, egg, honey (if using), and vanilla extract.
- Combine the wet ingredients with the dry ingredients, stirring until just mixed.
- Pour the batter into the prepared muffin tin, filling each cup about two-thirds of the way.
- Bake for 15-20 minutes or until a toothpick inserted comes out clean.
- Let cool before serving.
