Ingredients

  • 1 cup rolled oats
  • 1 cup unsweetened applesauce
  • 1 ripe banana, mashed
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 cup milk (or plant-based milk)
  • 1 egg (or flax egg)
  • 1/4 cup honey or maple syrup (optional)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the rolled oats, applesauce, mashed banana, cinnamon, and baking powder.
  3. In another bowl, whisk together the milk, egg, honey (if using), and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients, stirring until just mixed.
  5. Pour the batter into the prepared muffin tin, filling each cup about two-thirds of the way.
  6. Bake for 15-20 minutes or until a toothpick inserted comes out clean.
