Ingredients

  • 1 ripe banana, mashed
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • 1/4 cup unsweetened applesauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, mix together the rolled oats, pumpkin puree, mashed banana, cinnamon, vanilla extract, baking powder, and applesauce until everything is beautifully combined.
  3. Drop spoonfuls of the mixture—about a tablespoon each—onto a baking sheet lined with parchment paper.
  4. Bake for 15-20 minutes or until the edges look slightly golden.
  5. Allow the cookies to cool for a few minutes before transferring them to a cooling rack.
