- 1 cup rolled oats
- 1/2 cup pumpkin puree
- 1 ripe banana, mashed
- 1/4 teaspoon cinnamon
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon baking powder
- 1/4 cup unsweetened applesauce
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, mix together the rolled oats, pumpkin puree, mashed banana, cinnamon, vanilla extract, baking powder, and applesauce until everything is beautifully combined.
- Drop spoonfuls of the mixture—about a tablespoon each—onto a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until the edges look slightly golden.
- Allow the cookies to cool for a few minutes before transferring them to a cooling rack.
Notes
These cookies can be customized with nuts, spices, or chocolate chips. They store well in the fridge for up to a week or can be frozen for about 3 months.
