Easy Omurice

Description

A quick and easy one-pot Omurice that your family will love, made with rice, chicken, and a fluffy omelet.


Ingredients

  • 2 cups cooked rice
  • 1/2 cup ketchup
  • 1 onion, chopped
  • 1 cup cooked chicken or protein of choice, diced
  • 2 eggs
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Melt 1 tablespoon of butter in a medium skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the cooked rice and your diced chicken (or your chosen protein), then pour in the ketchup, mixing well. Season with salt and pepper and cook for about 3-4 minutes until heated through.
  3. Crack the eggs into a bowl and whisk. In the same pan, melt the remaining tablespoon of butter over low heat. Pour in the eggs and cook until just set on the bottom but still runny on top, about 2-3 minutes.
  4. Spoon the ketchup fried rice onto one side of the cooked omelet and carefully fold the other side over the rice. Serve warm.

Notes

Use day-old rice to prevent mushiness. This dish is customizable; feel free to add in leftover vegetables or different proteins.
