Instructions
- Take the steak out of the refrigerator and let it rest at room temperature for about 30 minutes.
- Season both sides of the steak generously with salt and black pepper.
- Heat a heavy skillet over medium-high heat for 2-3 minutes then add olive oil or butter.
- Add the steak to the pan and sear for 3-5 minutes until a golden-brown crust forms.
- Flip the steak and cook for another 3-5 minutes for medium-rare, adding garlic and herbs if desired.
- Check doneness with a meat thermometer (130°F for medium-rare).
- Remove the steak from the pan and let it rest for 5-10 minutes before slicing.
- Slice against the grain and serve with your favorite sides.
