Savory Parsnip Scones

Description

Delightful savory scones made with grated parsnips, perfect for a quick snack or side dish.


Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ⅓ cup unsalted butter (cold)
  • 1 cup parsnip (grated/shredded)
  • 1 egg
  • 9 tbsp buttermilk

Instructions

  1. Preheat your oven to 400ºF (205ºC).
  2. In a large bowl, mix together the flour, baking powder, and salt.
  3. In a measuring jug, combine buttermilk and beaten egg.
  4. Cut the cold butter into the dry ingredients until crumbly.
  5. Make a well in the dry ingredients and add the wet mixture. Mix gently.
  6. Fold in the grated parsnip.
  7. Turn the dough onto a floured surface, pat down to ¾” thick, and cut into desired shape.
  8. Place on a baking tray and brush with reserved egg and buttermilk mixture.
  9. Bake for 18 minutes or until golden brown, turning halfway through.

Notes

Feel free to add herbs, cheese, or bacon for extra flavor.
