Ingredients

- 2 cups all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- ⅓ cup unsalted butter (cold)
- 1 cup parsnip (grated/shredded)
- 1 egg
- 9 tbsp buttermilk
Instructions
- Preheat your oven to 400ºF (205ºC).
- In a large bowl, mix together the flour, baking powder, and salt.
- In a measuring jug, combine buttermilk and beaten egg.
- Cut the cold butter into the dry ingredients until crumbly.
- Make a well in the dry ingredients and add the wet mixture. Mix gently.
- Fold in the grated parsnip.
- Turn the dough onto a floured surface, pat down to ¾” thick, and cut into desired shape.
- Place on a baking tray and brush with reserved egg and buttermilk mixture.
- Bake for 18 minutes or until golden brown, turning halfway through.
Notes
Feel free to add herbs, cheese, or bacon for extra flavor.
