Description
A creamy, kid-friendly pea and mint soup that’s quick and easy to make in under 30 minutes, perfect for a comforting weeknight dinner.
Ingredients

- 1/2 onion, chopped
- 1 tablespoon butter
- 2 1/2 cups peas (fresh or frozen, defrosted)
- 1 1/2 cups chicken stock or vegetable stock
- 2 tablespoons mint, roughly chopped
- Salt and pepper to taste
- 1 tablespoon crème fraîche (approx, to serve)
Instructions
- Dice the onion. Warm a pot over medium heat and add the butter. Once melted, toss in the onion and cook for around 3-4 minutes until it’s softened and turning translucent.
- Add the peas to the pot and make sure they’re coated in that buttery goodness. Then, pour in the stock. Cover the pot and bring it to a simmer.
- Cook for about 2 minutes if using frozen peas, or 5-7 minutes for fresh peas until they’re bright green.
- Remove the pot from the heat and add in the chopped mint. Blend until smooth using an immersion blender or transfer it to a stand blender.
- Season with salt and pepper to taste. Serve warm or chilled, drizzling a dollop of crème fraîche in the center of each bowl.
Notes
Feel free to customize the ingredients based on what you have on hand. Perfect for meal prep and can be frozen for up to 3 months.
