- 1 can (20 oz) sliced pineapple, with juice
- 10 Maraschino cherries
- 1 cup packed light brown sugar
- 1/4 cup melted unsalted butter
- 1 box (15.25 oz) cake mix (French vanilla)
- 3 large eggs
- 1/2 cup vegetable oil
- 1 cup pineapple juice (or water)
Instructions
- Preheat your oven to 350°F (175°C).
- Spray a 9-inch by 13-inch baking dish with non-stick cooking spray.
- Melt the butter in a microwave-safe bowl and pour it into the prepared baking dish.
- Sprinkle the brown sugar over the melted butter, spreading it evenly.
- Arrange the pineapple slices on top of the brown sugar mixture.
- Place a Maraschino cherry in the center of each pineapple slice.
- In a large mixing bowl, combine the cake mix, eggs, vegetable oil, and reserved pineapple juice. Mix on low speed until smooth.
- Pour the batter gently over the pineapple and cherries.
- Bake for about 40-45 minutes, or until a cake tester comes out clean.
- Allow to cool for 5 minutes, then invert onto a serving platter.
- Slice and serve warm, optionally with vanilla ice cream.
