Ingredients

  • 1 can (20 oz) sliced pineapple, with juice
  • 10 Maraschino cherries
  • 1 cup packed light brown sugar
  • 1/4 cup melted unsalted butter
  • 1 box (15.25 oz) cake mix (French vanilla)
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup pineapple juice (or water)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spray a 9-inch by 13-inch baking dish with non-stick cooking spray.
  3. Melt the butter in a microwave-safe bowl and pour it into the prepared baking dish.
  4. Sprinkle the brown sugar over the melted butter, spreading it evenly.
  5. Arrange the pineapple slices on top of the brown sugar mixture.
  6. Place a Maraschino cherry in the center of each pineapple slice.
  7. In a large mixing bowl, combine the cake mix, eggs, vegetable oil, and reserved pineapple juice. Mix on low speed until smooth.
  8. Pour the batter gently over the pineapple and cherries.
  9. Bake for about 40-45 minutes, or until a cake tester comes out clean.
  10. Allow to cool for 5 minutes, then invert onto a serving platter.
  11. Slice and serve warm, optionally with vanilla ice cream.
