- 1.5 cups Unsweetened cranberry juice
- 2 tablespoons Fresh lemon juice
- 2 tablespoons Unflavored gelatin
- Optional sweetener (Stevia or monk fruit)
Instructions
- Pour the cranberry juice into a saucepan and sprinkle the unflavored gelatin over the surface. Let it bloom for about 5 minutes.
- Turn the heat to low and gently warm the mixture while whisking continuously until the gelatin fully dissolves.
- Remove from heat and stir in the fresh lemon juice.
- Pour the mixture into silicone molds or a glass dish, leaving space at the top.
- Chill in the fridge for at least 2 hours, or until fully set.
- Once set, cut into shapes or cubes and serve with fresh berries if desired.
