Ingredients

- 1/2 cup rolled oats
- 1/2 cup milk (dairy or non-dairy)
- 1/4 cup yogurt (optional)
- 1/4 cup pumpkin puree
- 1 tbsp maple syrup
- 1/2 tbsp chia seeds
- 1 tsp vanilla extract
- 1/2 tsp pumpkin spice
- 1/4 tsp ground cinnamon (optional)
- 1/8 tsp salt
- Toppings (chopped pecans, whipped cream, yogurt, granola)
Instructions
- Combine all ingredients in a jar and mix well.
- Seal the jar and refrigerate overnight (or at least for 4 hours).
- Stir before enjoying and adjust consistency with more milk if needed.
Notes
These oats can be stored in the refrigerator for up to 5 days. They can also be frozen for up to three months.
