Description
Delicious salmon cakes that come together in about 30 minutes, perfect for busy weeknight dinners.
Ingredients

- 1 lb salmon
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp black pepper
- 1 tsp salt
- 3 tbsp butter
- 1 cup plain panko crumbs
- 1 cup red onion, chopped finely
- 1/3 cup red bell pepper, chopped
- 1/3 cup yellow bell pepper, chopped
- 2 eggs, lightly beaten
- 2 tbsp mayonnaise
- 1 tbsp sour cream
- 1 tbsp chopped fresh dill
- 2 tbsp parsley, chopped
- 1 tbsp fresh lemon juice
- 1/2 tsp smoked or sweet paprika
- 1 tsp Worcestershire sauce
Instructions
- Preheat your oven to 425°F.
- Clean the salmon with lemon juice and warm water, then dry it with a paper towel.
- Season the salmon with salt, pepper, and garlic powder, and bake for 10-15 minutes until flaky.
- In a pan, heat olive oil and butter and sauté the onions and peppers for about 7 minutes until translucent.
- In a mixing bowl, combine the cooked salmon, panko crumbs, sautéed veggies, eggs, dill, parsley, lemon juice, Worcestershire sauce, mayo, and sour cream. Mix well.
- Form about 10-12 patties from the mixture.
- Add more butter and olive oil to the pan, heat to medium, and fry the patties for about 4 minutes on each side until golden brown.
- Serve and enjoy!
