Description

Delicious salmon cakes that come together in about 30 minutes, perfect for busy weeknight dinners.


Ingredients

  • 1 lb salmon
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp salt
  • 3 tbsp butter
  • 1 cup plain panko crumbs
  • 1 cup red onion, chopped finely
  • 1/3 cup red bell pepper, chopped
  • 1/3 cup yellow bell pepper, chopped
  • 2 eggs, lightly beaten
  • 2 tbsp mayonnaise
  • 1 tbsp sour cream
  • 1 tbsp chopped fresh dill
  • 2 tbsp parsley, chopped
  • 1 tbsp fresh lemon juice
  • 1/2 tsp smoked or sweet paprika
  • 1 tsp Worcestershire sauce

Instructions

  1. Preheat your oven to 425°F.
  2. Clean the salmon with lemon juice and warm water, then dry it with a paper towel.
  3. Season the salmon with salt, pepper, and garlic powder, and bake for 10-15 minutes until flaky.
  4. In a pan, heat olive oil and butter and sauté the onions and peppers for about 7 minutes until translucent.
  5. In a mixing bowl, combine the cooked salmon, panko crumbs, sautéed veggies, eggs, dill, parsley, lemon juice, Worcestershire sauce, mayo, and sour cream. Mix well.
  6. Form about 10-12 patties from the mixture.
  7. Add more butter and olive oil to the pan, heat to medium, and fry the patties for about 4 minutes on each side until golden brown.
  8. Serve and enjoy!

Notes

These salmon cakes can be customized with various ingredients and are great for using leftovers.
