A quick and delicious Salmon with Mango Salsa that comes together in about 30 minutes, perfect for a weeknight dinner.

- 4 salmon fillets
- 2 tablespoons soy sauce
- 2 tablespoons maple syrup
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, minced (optional)
- Juice of 1 lime
- Fresh cilantro, chopped (for garnish)
Instructions
- Marinate the salmon: In a mixing bowl, whisk together soy sauce, maple syrup, garlic powder, and black pepper. Let the salmon marinate for at least 30 minutes.
- Prepare the mango salsa: In another bowl, combine mango, red onion, jalapeño (if using), lime juice, and cilantro. Toss gently and set aside.
- Heat your grill or oven to medium-high. Lightly oil the grates.
- Grill the salmon for about 4-6 minutes on each side until it’s opaque and flakes easily with a fork.
- Serve the salmon topped with mango salsa and garnish with cilantro.
