Quick and Easy Sausage and Spinach Pasta

Description

This cozy, delicious Sausage and Spinach Pasta comes together in about 30 minutes and is made in one pot for a quick and easy weeknight meal.


Ingredients

  • ½ pound Italian turkey sausage, crumbled
  • 1 small onion, chopped
  • 1½ teaspoons canola oil
  • 1 clove garlic, minced
  • 2 cups water
  • 1 can great northern beans, rinsed and drained
  • 1 can diced tomatoes, undrained
  • 1 can reduced-sodium chicken broth
  • ¾ cup uncooked elbow macaroni
  • ¼ teaspoon pepper
  • 1 cup fresh spinach leaves
  • 5 teaspoons shredded Parmesan cheese

Instructions

  1. In a large saucepan, over medium heat, cook the sausage until no longer pink, about 5-7 minutes. Drain and set aside.
  2. In the same pan, add the chopped onion and canola oil. Sauté until translucent, about 4-5 minutes.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Add the water, great northern beans, diced tomatoes, chicken broth, elbow macaroni, and pepper. Bring to a boil while stirring occasionally.
  5. Lower the heat and cook uncovered for about 8-10 minutes, or until the pasta is tender.
  6. Stir in the cooked sausage and spinach leaves. Cook for an additional 2-3 minutes until the spinach is wilted.
  7. Garnish with Parmesan cheese before serving.

Notes

Feel free to swap out vegetables or pasta to suit your taste. This dish can also be made vegetarian by using veggie sausage and vegetable broth.
