This comforting meatloaf combines ground beef and stuffing mix for a quick, easy, and hearty weeknight dinner that pleases the whole family.

  • 1 box (6 oz) Stove Top stuffing mix
  • 1 cup water or beef broth
  • 2 large eggs
  • ½ cup ketchup (plus extra for topping)
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • ½ cup chopped onions (optional)
  • ¼ cup grated cheese (optional)
  • 2 tablespoons chopped parsley (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease or line a loaf pan with parchment paper.
  2. In a large bowl, combine the stuffing mix and your choice of water or beef broth. Let it sit for 2-3 minutes to soak up moisture.
  3. Add ground beef, eggs, ketchup, Worcestershire sauce, garlic powder, onion powder, salt, and pepper to the bowl. Mix gently until combined, avoiding overmixing.
  4. Transfer the mixture to the loaf pan and press gently into shape.
  5. Spread a thin layer of ketchup on top as a glaze.
  6. Bake for 45-55 minutes or until the internal temperature reaches 160°F (70°C).
  7. Let it sit for 5-10 minutes before slicing to hold together better.
