- 1 lb ground beef or turkey
- 1 onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 can tomato sauce (8 oz)
- 4 cups beef or vegetable broth
- 1 cup uncooked rice
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- Shredded cheese (optional, for topping)
Instructions
- In a large pot over medium heat, brown the ground meat of your choice for about 5-7 minutes until it’s no longer pink.
- Add the diced onion and green bell pepper. Cook for another 5 minutes until the onion is translucent and the peppers are tender.
- Stir in the minced garlic and cook for about 1 minute until fragrant.
- Add the diced tomatoes, tomato sauce, broth, rice, and Italian seasoning. Season with salt and pepper, bring to a boil.
- Reduce the heat and let it simmer for about 20 minutes until the rice is fully cooked.
- Ladle the soup into bowls and top with shredded cheese if desired.
