Ingredients

  • 4 pieces boneless skinless chicken breasts or thighs
  • 4 tablespoons butter (or olive oil)
  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken broth (or vegetable broth)
  • 2 tablespoons honey
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 cup caramelized onions
  • 1 cup shredded cheddar or Monterey Jack cheese (optional)
  • 2 tablespoons dried parsley (for garnish)
  • 1 teaspoon cayenne pepper or hot sauce (optional)
  • 1/2 cup heavy cream
  • 1 cup cherry tomatoes and kalamata olives (optional)

Instructions

  1. Cut chicken into bite-sized pieces and season with salt and pepper.
  2. Melt butter in a large skillet over medium heat.
  3. Add minced garlic and sauté until fragrant, about 30 seconds to a minute.
  4. Add chicken and cook until golden brown, about 5-7 minutes.
  5. Pour in chicken broth and bring to a simmer, then stir in heavy cream.
  6. Add honey, paprika, and any additional spices, cooking for another 2-3 minutes.
  7. Fold in caramelized onions and optional cheese until well combined.
  8. Add cherry tomatoes and olives, cooking for another 2 minutes.
  9. Remove from heat, stir in parsley, and adjust seasoning as needed.
  10. Serve hot and enjoy!
