- 4 tablespoons butter (or olive oil)
- 4 cloves garlic, minced
- 1 cup low-sodium chicken broth (or vegetable broth)
- 2 tablespoons honey
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1 cup caramelized onions
- 1 cup shredded cheddar or Monterey Jack cheese (optional)
- 2 tablespoons dried parsley (for garnish)
- 1 teaspoon cayenne pepper or hot sauce (optional)
- 1/2 cup heavy cream
- 1 cup cherry tomatoes and kalamata olives (optional)
Instructions
- Cut chicken into bite-sized pieces and season with salt and pepper.
- Melt butter in a large skillet over medium heat.
- Add minced garlic and sauté until fragrant, about 30 seconds to a minute.
- Add chicken and cook until golden brown, about 5-7 minutes.
- Pour in chicken broth and bring to a simmer, then stir in heavy cream.
- Add honey, paprika, and any additional spices, cooking for another 2-3 minutes.
- Fold in caramelized onions and optional cheese until well combined.
- Add cherry tomatoes and olives, cooking for another 2 minutes.
- Remove from heat, stir in parsley, and adjust seasoning as needed.
- Serve hot and enjoy!
