Description

These Tiramisu Cookies come together in about 30 minutes and require no baking, making them a perfect quick and easy sweet treat.


Ingredients

  • 180 g all-purpose flour
  • 2 tablespoons instant espresso powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 115 g unsalted butter (softened to room temperature)
  • 100 g granulated sugar
  • 50 g brown sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 200 g mascarpone cheese
  • 100 g whipping cream
  • 50 g powdered sugar
  • 1/2 teaspoon vanilla extract (for the cream layer)
  • 2 tablespoons cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the flour, espresso powder, baking powder, baking soda, and salt.
  3. In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  4. Add in the egg and the teaspoon of vanilla extract and mix until combined.
  5. Gradually mix in the dry ingredients from the first bowl.
  6. Scoop tablespoon-sized balls of dough onto a parchment-lined baking sheet and space them apart (about 2 inches).
  7. Bake for 10-12 minutes, or until the edges are golden brown.
  8. Remove from the oven and let cool on the pan for about 5 minutes, then transfer to a wire rack to cool completely.
  9. Meanwhile, prepare your mascarpone filling! In a mixing bowl, whip the whipping cream until soft peaks form.
  10. Fold in the mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.
  11. Once the cookies are cool, spread the mascarpone mixture in between two cookies to create a sandwich.
  12. Dust the tops with cocoa powder using a fine mesh strainer.

Notes

These cookies can be served with a scoop of vanilla ice cream or a drizzle of chocolate syrup for added indulgence.
