Description
These Tiramisu Cookies come together in about 30 minutes and require no baking, making them a perfect quick and easy sweet treat.
Ingredients

- 180 g all-purpose flour
- 2 tablespoons instant espresso powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 115 g unsalted butter (softened to room temperature)
- 100 g granulated sugar
- 50 g brown sugar
- 1 large egg (room temperature)
- 1 teaspoon vanilla extract
- 200 g mascarpone cheese
- 100 g whipping cream
- 50 g powdered sugar
- 1/2 teaspoon vanilla extract (for the cream layer)
- 2 tablespoons cocoa powder (for dusting)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together the flour, espresso powder, baking powder, baking soda, and salt.
- In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
- Add in the egg and the teaspoon of vanilla extract and mix until combined.
- Gradually mix in the dry ingredients from the first bowl.
- Scoop tablespoon-sized balls of dough onto a parchment-lined baking sheet and space them apart (about 2 inches).
- Bake for 10-12 minutes, or until the edges are golden brown.
- Remove from the oven and let cool on the pan for about 5 minutes, then transfer to a wire rack to cool completely.
- Meanwhile, prepare your mascarpone filling! In a mixing bowl, whip the whipping cream until soft peaks form.
- Fold in the mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Once the cookies are cool, spread the mascarpone mixture in between two cookies to create a sandwich.
- Dust the tops with cocoa powder using a fine mesh strainer.
Notes
These cookies can be served with a scoop of vanilla ice cream or a drizzle of chocolate syrup for added indulgence.
