Ingredients

- 1 pound boneless skinless chicken breasts
- 2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary
- 1/4 teaspoon salt
- 1/4 teaspoon coarsely ground pepper
- 1 cup reduced-sodium chicken broth
- 2 tablespoons sun-dried tomatoes, chopped
- 1 can (15-1/2 ounces) cannellini beans, rinsed and drained
Instructions
- In a small bowl, combine the chicken cubes, minced rosemary, salt, and pepper.
- Coat a large skillet with cooking spray and heat over medium heat. Add the seasoned chicken and cook for 5-7 minutes until browned.
- Stir in the chicken broth and sun-dried tomatoes, scraping the bits off the bottom of the pan. Bring to a boil.
- Reduce heat and let simmer uncovered for 3-5 minutes or until the chicken is cooked through.
- Stir in the rinsed and drained cannellini beans, heating through for another 2-3 minutes.
