Description

This cozy Tuscan Chicken and Beans comes together in about 30 minutes and all in one pot for a quick and easy weeknight meal that your family will adore!


Ingredients

  • 1 pound boneless skinless chicken breasts
  • 2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary
  • 1/4 teaspoon salt
  • 1/4 teaspoon coarsely ground pepper
  • 1 cup reduced-sodium chicken broth
  • 2 tablespoons sun-dried tomatoes, chopped
  • 1 can (15-1/2 ounces) cannellini beans, rinsed and drained

Instructions

  1. In a small bowl, combine the chicken cubes, minced rosemary, salt, and pepper.
  2. Coat a large skillet with cooking spray and heat over medium heat. Add the seasoned chicken and cook for 5-7 minutes until browned.
  3. Stir in the chicken broth and sun-dried tomatoes, scraping the bits off the bottom of the pan. Bring to a boil.
  4. Reduce heat and let simmer uncovered for 3-5 minutes or until the chicken is cooked through.
  5. Stir in the rinsed and drained cannellini beans, heating through for another 2-3 minutes.
