Description

This incredibly delicious Tuscan Salmon comes together in about 30 minutes and is made all in one skillet for a quick and easy weeknight meal that your family will love!


Ingredients

Scale
  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach
  • 1 cup low-sodium chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Optional: Whole wheat or high-protein pasta
  • Optional: Parmesan cheese for serving

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat until it shimmers.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Gently place the salmon fillets in the skillet, skin-side down, and cook for 4-5 minutes on each side until flaky.
  4. Remove the salmon and set aside. Wipe any big bits off the pan but leave enough for flavor.
  5. Add the halved cherry tomatoes and spinach to the skillet and cook for 2-3 minutes until the spinach is wilted.
  6. Pour in the chicken broth and stir in the Italian seasoning. Let it simmer for 2-3 minutes.
  7. Return the salmon to the skillet, season with salt and pepper, and cook for an additional 2 minutes to warm everything up.
  8. Serve the Tuscan Salmon over cooked pasta or with your favorite side vegetables. Top with Parmesan cheese if desired.
