Description
This delicious White Chili with a Kick comes together in about 30 minutes and is made all in one pot for a quick and easy weeknight meal that your family will love!

- 1 large onion, chopped
- 6 tablespoons butter, cubed
- 2 tablespoons all-purpose flour
- 2 cups chicken broth
- 3/4 cup half-and-half cream
- 1 rotisserie chicken, cut into bite-sized pieces
- 2 cans (15 ounces each) cannellini beans, rinsed and drained
- 1 can (11 ounces) white corn, drained
- 2 cans (4 ounces each) chopped green chiles
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon white pepper
- 1/2 teaspoon hot pepper sauce
- 1–1/2 cups shredded pepper jack cheese
- Optional: Salsa and chopped green onions for garnish
Instructions
- Sauté the onion: In a large Dutch oven, melt the butter over medium heat. Toss in the chopped onion and sauté for about 5 minutes until it’s translucent.
- Whisk in the flour: Sprinkle in the flour and whisk until combined. Cook for another 2-3 minutes until golden brown.
- Add the broth and cream: Gradually pour in the chicken broth and half-and-half, whisking constantly to avoid lumps. Bring to a simmer and cook for about 2 minutes until it thickens slightly.
- Stir in the goodies: Toss in the rotisserie chicken, cannellini beans, corn, green chiles, cumin, chili powder, salt, white pepper, and hot pepper sauce. Stir together and heat through for another 5-7 minutes.
- Melt in the cheese: Add the shredded pepper jack cheese and stir until melted and combined.
- Garnish and serve: Serve each bowl with salsa and chopped green onions if desired.
