  • 1 large onion, chopped
  • 6 tablespoons butter, cubed
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 3/4 cup half-and-half cream
  • 1 rotisserie chicken, cut into bite-sized pieces
  • 2 cans (15 ounces each) cannellini beans, rinsed and drained
  • 1 can (11 ounces) white corn, drained
  • 2 cans (4 ounces each) chopped green chiles
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon hot pepper sauce
  • 11/2 cups shredded pepper jack cheese
  • Optional: Salsa and chopped green onions for garnish

Instructions

  1. Sauté the onion: In a large Dutch oven, melt the butter over medium heat. Toss in the chopped onion and sauté for about 5 minutes until it’s translucent.
  2. Whisk in the flour: Sprinkle in the flour and whisk until combined. Cook for another 2-3 minutes until golden brown.
  3. Add the broth and cream: Gradually pour in the chicken broth and half-and-half, whisking constantly to avoid lumps. Bring to a simmer and cook for about 2 minutes until it thickens slightly.
  4. Stir in the goodies: Toss in the rotisserie chicken, cannellini beans, corn, green chiles, cumin, chili powder, salt, white pepper, and hot pepper sauce. Stir together and heat through for another 5-7 minutes.
  5. Melt in the cheese: Add the shredded pepper jack cheese and stir until melted and combined.
  6. Garnish and serve: Serve each bowl with salsa and chopped green onions if desired.
