Delicious and simple wind fritters made in one bowl that are perfect for a quick weeknight meal.
Ingredients

- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 tablespoon vanilla extract
- 1 tablespoon melted butter (or oil)
- 1 large egg
- 1 pinch of salt
- 1 cup milk
Instructions
- In a bowl, mix the flour, sugar, and salt until well combined.
- In a separate bowl, whisk together the egg, milk, vanilla, and melted butter or oil until smooth and frothy.
- Combine the wet and dry ingredients until you have a thick batter with no lumps.
- Heat half an inch of oil in a frying pan over medium heat.
- Pour small amounts of batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
- Remove and drain on paper towels to remove excess oil.
- Serve warm, optionally topped with powdered sugar, maple syrup, or chocolate sauce.
