Delicious zucchini fritters that come together in about 30 minutes, customizable and perfect for busy weeknight meals.
Ingredients

- 2 medium zucchinis
- 1/2 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Oil for frying
Instructions
- Grate the zucchinis and squeeze out moisture using a kitchen towel.
- In a mixing bowl, combine grated zucchini, salt, flour, Parmesan cheese, egg, black pepper, garlic powder, and onion powder. Mix well.
- Heat about 1/4 inch of oil in a large skillet over medium heat.
- Drop spoonfuls of the zucchini mixture into the hot oil, frying for 3-4 minutes on each side until golden brown.
- Drain on paper towels and serve warm.
Notes
Serve with tzatziki sauce or spicy mayo. Leftovers can be stored in the fridge for up to 3 days or frozen for later use.
