Description

Delicious zucchini fritters that come together in about 30 minutes, customizable and perfect for busy weeknight meals.


Ingredients

  • 2 medium zucchinis
  • 1/2 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Oil for frying

Instructions

  1. Grate the zucchinis and squeeze out moisture using a kitchen towel.
  2. In a mixing bowl, combine grated zucchini, salt, flour, Parmesan cheese, egg, black pepper, garlic powder, and onion powder. Mix well.
  3. Heat about 1/4 inch of oil in a large skillet over medium heat.
  4. Drop spoonfuls of the zucchini mixture into the hot oil, frying for 3-4 minutes on each side until golden brown.
  5. Drain on paper towels and serve warm.

Notes

Serve with tzatziki sauce or spicy mayo. Leftovers can be stored in the fridge for up to 3 days or frozen for later use.
