This delicious sautéed bok choy comes together in about 10 minutes and uses just one pan for a quick and easy side dish that your family will love! Switch it up by adding in whatever veggies or proteins you have on hand or consider it a ‘clean out the fridge’ meal to use up those odds and ends that have been lingering.

Ingredients Breakdown

  • 2 heads of bok choy
  • 1 tablespoon tamari or soy sauce
  • 3 cloves garlic, grated
  • 2 teaspoons freshly grated ginger
  • 1 tablespoon sesame seeds, plus more for garnish
  • 2 tablespoons avocado oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • Juice of 1 lemon cheek
  • 1 tablespoon sesame oil

Now that we’ve got our ingredient lineup ready, let’s get cooking!

How to Make Sautéed Bok Choy

  1. Prep the Bok Choy (3 minutes)
First things first! Wash and dry your bok choy well (I find my salad spinner really does the trick here). Stack the leaves up, then cut them down the middle lengthwise. Next, chop them into ¾” pieces. You want nice, bite-sized bits.

  2. Create the Flavor Paste (2 minutes)
In a small bowl, whisk together the tamari (or soy sauce), grated garlic, fresh ginger, and sesame seeds until it’s all blended into a paste. It should look heavenly and smell amazing too!

  3. Sauté the Bok Choy (4 minutes)
Heat the avocado oil in a large skillet over medium heat. Add your chopped bok choy, giving it a little stir for even cooking. Season it with a couple pinches of salt and pepper, letting it wilt slightly, this should take about 1 minute.

  4. Add the Flavor Paste (3-5 minutes)
Now, here’s where it gets really good. Add the ginger-garlic paste to the pan and cook everything together for an additional 3-5 minutes, stirring occasionally until the bok choy leaves are wilted but still vibrant and green. The smell will be incredible!

  5. Finishing Touches (1 minute)
Remove the pan from heat and squeeze the juice of that lemon cheek all over the dish, followed by a drizzle of sesame oil. This combo brightens up everything! Garnish with some extra sesame seeds and serve as a side or over rice or toast
