Ingredient Breakdown

  • ½ pound Italian turkey sausage, crumbled
  • 1 small onion, chopped
  • 1½ teaspoons canola oil
  • 1 clove garlic, minced
  • 2 cups water
  • 1 can great northern beans, rinsed and drained
  • 1 can diced tomatoes, undrained
  • 1 can reduced-sodium chicken broth
  • ¾ cup uncooked elbow macaroni
  • ¼ teaspoon pepper
  • 1 cup fresh spinach leaves
  • 5 teaspoons shredded Parmesan cheese

Instructions For The Perfect Sausage and Spinach Pasta

  1. Cook the Sausage: In a large saucepan, over medium heat, cook ½ pound of Italian turkey sausage, crumbled, until no longer pink, about 5-7 minutes. Make sure to stir occasionally to break it into smaller bits. Once cooked, drain and set it aside.

  2. Sauté the Onion: In the same pan, add 1 small chopped onion and 1½ teaspoons of canola oil. Sauté until the onion is translucent and tender, around 4-5 minutes. The aroma is going to be amazing!

  3. Add Garlic: Add 1 minced garlic clove and sauté for another minute until fragrant. Trust me, at this stage, your kitchen will smell heavenly!

  4. Combine the Ingredients: Now, add in 2 cups of water, 1 can of great northern beans (rinsed and drained), 1 can of diced tomatoes (undrained), 1 can of reduced-sodium chicken broth, ¾ cup uncooked elbow macaroni, and a ¼ teaspoon of pepper. Bring it all to a boil while stirring occasionally.

  5. Cook the Pasta: Lower the heat and cook uncovered for about 8-10 minutes, or until the pasta is tender. Keep an eye on it and stir to ensure nothing sticks to the bottom!

  6. Add Sausage and Spinach: Once everything is cooked and mouthwatering, reduce the heat to low and stir in the cooked sausage and 1 cup of fresh spinach leaves. Cook for an additional 2-3 minutes, just until the spinach is wilted, look at all that vibrant green!

  7. Garnish and Serve: Garnish with 5 teaspoons of shredded Parmesan cheese right before serving. Delicious!
