Quick and Easy Boursin Cheese Chicken

Description

A creamy dish that comes together in under 30 minutes, using just one skillet for a quick and easy weeknight meal.


Ingredients

  • 2 boneless, skinless chicken breasts (about 1 to 1.5 pounds)
  • 1 package (5.2 oz) Boursin cheese (garlic & herb flavor recommended)
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Heat the skillet! In a large skillet, heat 1 tablespoon of olive oil over medium heat for about 1-2 minutes.
  2. Season your chicken breasts with salt and pepper on both sides. Once the oil is shimmering, add the chicken to the skillet. Cook until browned and cooked through, about 6-7 minutes per side.
  3. Remove the chicken from the skillet and set it aside.
  4. Pour in 1 cup of heavy cream and add the Boursin cheese. Stir until melted and combined, about 3-4 minutes.
  5. Return the chicken to the skillet, coating it in the sauce. Simmer on low for about 1-2 minutes.
  6. Plate the chicken, spooning extra sauce over the top, and garnish with chopped parsley if desired.

Notes

Serve over rice or alongside roasted vegetables for a complete meal. Leftovers can be stored in the fridge for 3-4 days.
