  • 1 pound breakfast sausage
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup milk
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or give it a light grease.
  2. Cook the sausage in a skillet over medium heat until browned, breaking it up while it cooks.
  3. Whisk together the flour, baking powder, baking soda, salt, and black pepper in a large mixing bowl.
  4. Whisk together the milk, eggs, and vegetable oil in a separate bowl until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir until just mixed; lumps are okay.
  6. Fold in the cooked sausage and shredded cheese.
  7. Spoon the batter into the muffin cups, filling them about 3/4 full.
  8. Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
  9. Let them cool in the pan for about 5-10 minutes before transferring to a wire rack.
