Description
A delicious one-pot cornbread cowboy casserole that comes together in about 30 minutes, perfect for a quick weeknight dinner.

- 1 pound ground beef
- 1 onion, diced
- 1 red bell pepper, chopped
- 1 can of corn, drained
- 1 can of black beans, rinsed and drained
- 1 can of diced tomatoes
- 1 package of cornbread mix
- 1 cup shredded cheddar cheese
- 1 teaspoon chili powder
- 1 teaspoon cumin
Instructions
- Preheat your oven to 375°F (190°C).
- Brown the ground beef, onion, and red bell pepper in a large skillet over medium heat for about 5-7 minutes.
- Stir in the corn, black beans, diced tomatoes, chili powder, and cumin for an additional 2-3 minutes.
- Prepare the cornbread mix according to package instructions.
- Spread the meat mixture evenly in a 9×13 baking dish.
- Pour the cornbread batter over the top of the meat mixture.
- Sprinkle the shredded cheddar cheese evenly on top.
- Bake in the preheated oven for about 25-30 minutes.
- Let cool for a few minutes before serving.
