Description

A delicious one-pot cornbread cowboy casserole that comes together in about 30 minutes, perfect for a quick weeknight dinner.


Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 1 red bell pepper, chopped
  • 1 can of corn, drained
  • 1 can of black beans, rinsed and drained
  • 1 can of diced tomatoes
  • 1 package of cornbread mix
  • 1 cup shredded cheddar cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground beef, onion, and red bell pepper in a large skillet over medium heat for about 5-7 minutes.
  3. Stir in the corn, black beans, diced tomatoes, chili powder, and cumin for an additional 2-3 minutes.
  4. Prepare the cornbread mix according to package instructions.
  5. Spread the meat mixture evenly in a 9×13 baking dish.
  6. Pour the cornbread batter over the top of the meat mixture.
  7. Sprinkle the shredded cheddar cheese evenly on top.
  8. Bake in the preheated oven for about 25-30 minutes.
  9. Let cool for a few minutes before serving.
