Quick and Easy French Onion Chicken Rice Casserole

Description

A warm and comforting one-pot casserole that combines chicken, rice, and a creamy onion sauce, perfect for busy weeknights.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup uncooked white rice
  • 1 can (10.5 oz) condensed French onion soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (14.5 oz) chicken broth
  • 1 packet (1 oz) dry onion soup mix
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 2 tablespoons unsalted butter, melted
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the uncooked rice, French onion soup, cream of mushroom soup, and chicken broth in a large mixing bowl until well incorporated.
  3. Layer half of the mixture into a 9×13 inch baking dish.
  4. Season chicken breasts with salt and pepper and place them on top of the rice mixture.
  5. Top with the remaining mixture and cover with dry onion soup mix.
  6. Cover with aluminum foil and bake for 1 hour.
  7. Remove the foil, sprinkle mozzarella and cheddar cheeses on top, and bake uncovered for another 10-15 minutes.
  8. Cool for a few minutes before serving and garnish with fresh parsley if desired.
