A warm and comforting one-pot casserole that combines chicken, rice, and a creamy onion sauce, perfect for busy weeknights.

- 4 boneless, skinless chicken breasts
- 1 cup uncooked white rice
- 1 can (10.5 oz) condensed French onion soup
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (14.5 oz) chicken broth
- 1 packet (1 oz) dry onion soup mix
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 2 tablespoons unsalted butter, melted
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Mix the uncooked rice, French onion soup, cream of mushroom soup, and chicken broth in a large mixing bowl until well incorporated.
- Layer half of the mixture into a 9×13 inch baking dish.
- Season chicken breasts with salt and pepper and place them on top of the rice mixture.
- Top with the remaining mixture and cover with dry onion soup mix.
- Cover with aluminum foil and bake for 1 hour.
- Remove the foil, sprinkle mozzarella and cheddar cheeses on top, and bake uncovered for another 10-15 minutes.
- Cool for a few minutes before serving and garnish with fresh parsley if desired.
