- 2 tablespoons olive oil
- 2 large onions, sliced
- 2 cups beef or vegetable broth
- 1 cup grated Gruyère cheese
- 1 teaspoon thyme

Instructions
- Preheat your oven to 350°F (175°C).
- Sauté the onions in olive oil over medium heat until soft and translucent, about 10-15 minutes.
- Add the broth and thyme, and bring to a simmer for about 5 minutes.
- Toast the sourdough in the oven until golden brown, about 5-7 minutes.
- Assemble the toasted sourdough with the onion mixture and sprinkle with Gruyère cheese.
- Bake in the oven for another 10 minutes until the cheese is bubbly and golden.
- Serve warm with a fresh salad for an extra touch.
