Description

A delightful frozen treat that combines ripe peaches and creamy yogurt, perfect for hot summer days.


Ingredients

  • 2 ripe peaches, sliced into rings
  • 1 cup Greek yogurt, plain or vanilla
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Fresh mint leaves (optional)
  • 1 cup granola or crushed nuts (optional topping)
  • 6 popsicle molds and sticks

Instructions

  1. Prep the peaches by washing and slicing them into rings about 1/2 inch thick, removing the pit.
  2. Whip up the yogurt mixture by combining Greek yogurt, honey (or maple syrup), and vanilla in a bowl until smooth.
  3. Assemble your pops by placing a peach ring in the bottom of each mold, pouring in the yogurt mixture, and topping with another peach ring.
  4. Insert the popsicle sticks into the molds, centering them.
  5. Freeze the molds for 4 to 6 hours until solid.
  6. Release the pops by running warm water over the molds and gently pulling them out.
  7. Optional – Add granola or crushed nuts and garnish with fresh mint before serving.
