A delightful frozen treat that combines ripe peaches and creamy yogurt, perfect for hot summer days.
Ingredients

- 2 ripe peaches, sliced into rings
- 1 cup Greek yogurt, plain or vanilla
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- Fresh mint leaves (optional)
- 1 cup granola or crushed nuts (optional topping)
- 6 popsicle molds and sticks
Instructions
- Prep the peaches by washing and slicing them into rings about 1/2 inch thick, removing the pit.
- Whip up the yogurt mixture by combining Greek yogurt, honey (or maple syrup), and vanilla in a bowl until smooth.
- Assemble your pops by placing a peach ring in the bottom of each mold, pouring in the yogurt mixture, and topping with another peach ring.
- Insert the popsicle sticks into the molds, centering them.
- Freeze the molds for 4 to 6 hours until solid.
- Release the pops by running warm water over the molds and gently pulling them out.
- Optional – Add granola or crushed nuts and garnish with fresh mint before serving.
