Ingredients Needed
- 1 lb Ground Italian Turkey Sausage
- 1 Medium Onion, Chopped
- 1 Small to Medium Cabbage, Cut and Diced
- 1/2 Cup Uncooked Rice
- 2-3 Tbs Minced Garlic
- 2 Tbs Tomato Paste
- 1 (28 oz) Can of Diced Tomatoes
- 1 1/2 Cups V8 Juice
- 4 Cups Beef Broth
- 1 Tbs Worcestershire Sauce
- 1 tsp Thyme
- 1 tsp Paprika
- 1 tsp Salt
- 1 tsp Pepper
How to Make Golumpki Soup
In a stock pot, over medium heat, brown the ground turkey sausage (about 5-7 minutes), stirring occasionally until it’s nicely cooked through and crumbles nicely. The smell will be heavenly!
Next, add the chopped onions to the pot and cook until they become soft and translucent, which will take about 3-4 minutes. If you start to see bits sticking to the bottom, don’t worry, just scrape those yummy bits off. They add flavor!
Now, toss in the diced cabbage and cook until it begins to soften, about 2-3 minutes. You’ll want it to still have some crunch, but tender enough to enjoy.
Then, push the sausage, onions, and cabbage to the edges of the pot to create an opening in the middle. Add the tomato paste and let it cook for 1-2 minutes until it starts to darken, this is going to add layers of flavor!
Now, stir in the remaining ingredients: diced tomatoes, V8 juice, beef broth, Worcestershire sauce, thyme, paprika, salt, and pepper. Bring to a simmer, then reduce the heat.
Cover the pot and let it simmer for about 25-30 minutes, or until the rice is cooked and the cabbage is tender. The aroma will fill your kitchen and maybe even tempt your family to start peeking!
