Gozleme (Traditional Turkish Recipe)

This delicious Gozleme!! comes together in about 30 minutes and is made right in your skillet for a quick and easy weeknight dinner that your family will love!

Ingredient Breakdown

For the Pastry

  • 2.5 cups (375g) all-purpose flour: This is your base! If you’re looking for gluten-free options, feel free to substitute with a gluten-free all-purpose blend. I’ll tell ya, it works just as well!
  • 1/3 cup (85ml) extra virgin olive oil: Gives it that rich flavor and tenderness!
  • 3/4 cup (185ml) water: Lukewarm water helps bring the dough together.
  • 1/2 tsp salt: Just a couple pinches to enhance the flavor!

Spinach and Feta Filling

  • 300g (10oz) baby spinach: Fresh spinach really brightens up the filling!
  • 2 garlic cloves, minced: Because garlic makes everything better.
  • 2 large eggs: This adds a creamy texture!
  • 1 tsp black pepper: Adjust to your taste, but I love a good kick!
  • 300g (10oz) Danish feta: Creamy and tangy, it really shines in this dish!
  • 2 cups (200g) shredded mozzarella cheese: This is where the gooey goodness comes in, love it!

Lamb or Beef Filling

  • 1 tbsp olive oil: For sautéing that beef or lamb.
  • 2 garlic cloves, minced: Same rule applies, more garlic, more flavor!
  • 1 onion, finely chopped: Sweetens everything beautifully.
  • 500g (1 lb) beef or lamb mince: The heart of the dish!
  • 1 capsicum/bell pepper, chopped: Adds a pop of color and crunch!
  • 90g (3oz) baby spinach: Yes, more spinach! It’s good for ya!
  • 1.5 tsp cumin powder: Brings in that warm, earthy essence we love.
  • 1 tsp paprika: A hint of smokiness here.
  • 1/2 tsp cayenne: Adjust the heat to your personal preference!
  • 3/4 tsp each salt and pepper: Don’t forget those trusty seasonings!
  • 1 tbsp water: Helps bind that filling!

To Serve

  • Lemon wedges (optional): A squeeze of lemon at the end? Yes, please!

How to Make Gozleme!

  1. Prepare the Dough: In a large mixing bowl, combine the flour and salt. Make a well in the center, then pour in the olive oil and water. Mix until it comes together into a dough. You’ll want to knead this for about 5 minutes until it’s smooth and elastic. Cover with a clean cloth and set aside to rest while you get that delicious filling ready!

  2. Spinach and Feta Filling: In a skillet over medium heat, add a drizzle of olive oil, add in the garlic, and cook until fragrant, just about a minute! Toss in the baby spinach; it’ll wilt down quickly, just a couple of minutes! Remove from heat and add eggs, feta, black pepper, and mozzarella, mix until it’s all friendly.

  3. Lamb or Beef Filling: Grab a skillet and heat the olive oil over medium heat. Sauté the onion, stirring occasionally until it’s translucent (about 3-4 minutes). Then, toss in the garlic, and cook until fragrant. Now, add in the minced beef or lamb! Cook it until well-browned. Wait ’til you get that aroma! Next, add in the capsicum, spinach, cumin, paprika, and cayenne, and let everything mingle. Season all that goodness with salt and pepper. Mix that in and add a splash of water to deglaze, scraping the yummy bits off the bottom. You want those flavorful bits! Remove from heat and let cool slightly.

  4. Assemble the Gozleme: On a floured surface, divide your dough into equal balls (about 4-6 depending on size preference). Roll one ball out into a thin circle, think about an 8-10 inches diameter. Spoon your filling onto half of the dough, leaving some space around the edges. Fold the other half over and pinch to seal! Crimp with a fork for added flair and to make sure no filling escapes!

  5. Cooking: Heat a skillet over medium heat and lightly grease it with oil. Cook the Gozleme for about 3-5 minutes on each side until they’re golden brown and crisp! You’ll want to flip them halfway through. The smell, oh my goodness!

  6. Serving: Slice them into wedges, serve warm with lemon on the side, and enjoy!

Why This Recipe Works

Quick & Easy

This Gozleme comes together in under 30 minutes! I mean, who doesn’t want a delicious, homemade meal on the table quickly? Perfect for those busy weeknights.

Customizable

Seriously, you can tailor your Gozleme to whatever ingredients you have lying around. Got some leftover meats or veggies? Just toss them in. Add whatever spices you love. The kids can get creative here, too.

Comfort Food

These cheesy, fluffy pockets are ultimate comfort food loaded with tons of flavor. The crispy exterior gives way to warm, gooey goodness inside, it’s like a hug on a plate. Yep, I’m talking warm fuzzy feelings in food form!

Meal Prep Friendly

You can prep the dough and filling ahead of time! Store them separately in the fridge for a couple of days. Just roll, fill, and cook when you’re ready! It’s like having a secret stash of joy waiting for you.

Make Ahead & Freeze

Did I mention they freeze beautifully? Just cook them slightly less than you normally would, then pop into the freezer. When you’re ready, thaw and cook until crispy and golden. Perfect to have on hand for those rainy days!

Serving Suggestions

Pair your Gozleme with a simple salad, maybe a tangy yogurt dipping sauce, or even tzatziki. It’s like the ultimate meal combo.

Storage

These little beauties are best eaten fresh, but if you find yourself with some leftovers (which rarely happens in my house), store them in an airtight container in the refrigerator for about 2-3 days.

Reheating Instructions

The best way to reheat them is in a skillet over medium-low heat. Just a minute or two on each side to bring back that crispy texture. Don’t use the microwave here, kinda defeats the purpose!

Freezer Friendly

Yep! You can freeze them! Just be sure to separate them with parchment paper and freeze them in a single layer before transferring them to a zip-top bag. When you’re ready, no need to thaw, just toss them in a skillet until they’re warm and crisp!

There you have it! A delicious, comforting, and quick family dinner that’s perfect for the hectic weeknights ahead. Gozleme might just become the new star of your cooking routine.
