- 4 boneless skinless chicken breasts (about 1.5 lbs total)
- Salt and black pepper (to taste)
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 lb mushrooms (sliced white or cremini)
- 3 cloves garlic (minced)
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Asiago cheese
- 1 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley (chopped, for garnish)
Instructions
- Season the chicken breasts with salt and black pepper on both sides.
- Heat olive oil in a skillet over medium-high heat and sear the chicken for about 4-5 minutes on each side until golden brown. Remove the chicken and set aside.
- Melt the butter in the same skillet, add the sliced mushrooms, and sauté for about 5-7 minutes until browned and tender.
- Add minced garlic and stir until fragrant, about 30 seconds.
- Pour in the chicken broth and scrape the bottom of the pan to bring back the flavors.
- Stir in heavy cream, Asiago cheese, thyme, and red pepper flakes, then bring to a simmer.
- Return the chicken to the skillet, cover, and simmer for about 5-7 minutes until cooked through (internal temperature should reach 165°F).
- Garnish with fresh parsley and serve over pasta, rice, or mashed potatoes.
