A quick and delicious Boursin stuffed chicken breast recipe that is perfect for busy weeknights.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 oz Boursin cheese
  • 1 cup spinach, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine Boursin cheese, chopped spinach, and minced garlic in a mixing bowl.
  3. Carefully cut a pocket into each chicken breast.
  4. Stuff each pocket with the cheese mixture.
  5. Season the outside of the chicken with salt and pepper.
  6. Heat the olive oil in a skillet over medium-high heat and sear the chicken for about 3-4 minutes on each side until golden brown.
  7. Transfer the chicken to a baking dish and sprinkle with breadcrumbs if desired.
  8. Bake for about 20-25 minutes until the internal temperature reaches 165°F.
  9. Let the chicken rest for a few minutes before slicing.
  10. Serve and enjoy!

Serve with roasted vegetables or salad. Can be frozen before baking.
