A quick and delicious Boursin stuffed chicken breast recipe that is perfect for busy weeknights.

- 4 boneless, skinless chicken breasts
- 4 oz Boursin cheese
- 1 cup spinach, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- 1/2 cup breadcrumbs (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Combine Boursin cheese, chopped spinach, and minced garlic in a mixing bowl.
- Carefully cut a pocket into each chicken breast.
- Stuff each pocket with the cheese mixture.
- Season the outside of the chicken with salt and pepper.
- Heat the olive oil in a skillet over medium-high heat and sear the chicken for about 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and sprinkle with breadcrumbs if desired.
- Bake for about 20-25 minutes until the internal temperature reaches 165°F.
- Let the chicken rest for a few minutes before slicing.
- Serve and enjoy!

Serve with roasted vegetables or salad. Can be frozen before baking.
