Instructions For The Perfect Sausage and Spinach Pasta
Cook the Sausage: In a large saucepan, over medium heat, cook ½ pound of Italian turkey sausage, crumbled, until no longer pink, about 5-7 minutes. Make sure to stir occasionally to break it into smaller bits. Once cooked, drain and set it aside.
Sauté the Onion: In the same pan, add 1 small chopped onion and 1½ teaspoons of canola oil. Sauté until the onion is translucent and tender, around 4-5 minutes. The aroma is going to be amazing!
Add Garlic: Add 1 minced garlic clove and sauté for another minute until fragrant. Trust me, at this stage, your kitchen will smell heavenly!
Combine the Ingredients: Now, add in 2 cups of water, 1 can of great northern beans (rinsed and drained), 1 can of diced tomatoes (undrained), 1 can of reduced-sodium chicken broth, ¾ cup uncooked elbow macaroni, and a ¼ teaspoon of pepper. Bring it all to a boil while stirring occasionally.
Cook the Pasta: Lower the heat and cook uncovered for about 8-10 minutes, or until the pasta is tender. Keep an eye on it and stir to ensure nothing sticks to the bottom!
Add Sausage and Spinach: Once everything is cooked and mouthwatering, reduce the heat to low and stir in the cooked sausage and 1 cup of fresh spinach leaves. Cook for an additional 2-3 minutes, just until the spinach is wilted, look at all that vibrant green!
Garnish and Serve: Garnish with 5 teaspoons of shredded Parmesan cheese right before serving. Delicious!
